We didn’t know we could do a lot with plantain until @Tspiceskitchen, a food stylist showed us how to.

In a series of Twitter posts, she showed us how to make fluffy pancakes using overripe plantain. Although you can also use plantains that are not overripe, it’s just that it’s sweeter and fluffier when it’s overripe.
